Vinification: fermentation with selected yeasts at a controlled temperature (24 °C) takes place in a stainless steel vat with a slight daily breaking of the marc cap, at intervals or continuously, by internal rotation of the cap.
Ageing: the wine is aged in wood for 30 months plus a further 12 months in bottle. Drying: still with natural method in boxes and racks in well-ventilated rooms with periodic control of the health of the grapes and pressing according to the vintage in mid-December or early January.
Color: deep ruby red
Perfume: jam, dried flowers, tobacco and chocolate
Taste: elegant and velvety, with a return of scents
