After a soft pressing the grapes undergo a long maceration. The alcoholic fermentation takes place spontaneously with indigenous yeasts without the use of sulphites.
In small oak barrels for at least 18 months in contact with its indigenous yeasts.
In bottle at a controlled temperature of 15°C for at least 5 years.
Intense garnet red.
Strong notes of ripe fruit, black cherry and plum are mixed with slight hints of toasted wood, leaving ample room for more accentuated fragrances of blackberries, wild flowers, mint and cocoa.
Ample, soft acidity, ripe tannins, on the finish return the fruity olfactory sensations, long and harmonious finish.
Roasts of red meat, lamb, game, wild boar, truffle food and mature cheese.
